My focus is on producing healthy, nutrient-dense food in an environmentally-sustainable and ethical manner. However, I have learnt to distinguish between edible and tasty and I love it when travellers from other cultures teach me how to use a food in a way previously unknown to me (remember, all of NZ food plants are imports).
